Salt Prawns with Lime Butter
What you need
6 prawns; 1 small lime; 50g butter; oil for frying; 1tbs cornour; 2tsp salt;
Pepper.
What you do
Heat oil. Place our, salt and pepper in a bowl and toss prawns in the
mixture. Fry prawns until just cooked. Melt butter slowly. When butter
is liquid pour into a small bowl and add the grated rind and juice of the
lime to use for dipping the peeled prawns.
Poached Fish on Rösti
What you need
2 firm white fish fillets; 200ml milk; a knob of butter; 1 clove garlic, nely chopped; salt and pepper; 1 tsp cornour. Rösti: 1 large potato; 1 large kumala; salt and pepper; a little oil.
What you do
To make Rösti peel and boil potato and kumala for 12-15 minutes; cool and grate. Heat oil in a pan. When hot place grated potato and kumala, season and fry. With a wooden spoon make a round shape like a thick pancake. Cook both sides until golden brown. While Rösti is cooking, heat milk and add butter, garlic, salt and pepper and sh. Simmer on medium heat until sh is cooked but tender. Do not overcook. Remove sh and mix cornour with a little cold milk. Turn up the heat and stir in to poaching liquid. Stir until it thickens. Serve with fresh steamed vegetables on top of the Rösti.
Quick Chocolate Delight
What you need
250ml whipping cream; 1 large bar of dark
chocolate.
What you do
Break chocolate into pieces and place in a bowl.
Heat in the microwave or in a double boiler (or a
metal bowl on a saucepan of boiling water) until
melted. Whip cream until sti and fold in melted
chocolate. Pour into glasses and place in the fridge
until ready to serve.
