Who would have thought fried breadfruit could pass off as exotic food? Or the fact that boiled tapioca crushed and blended with Indian spices and served with other local ingredients could get your taste buds tingling? Its a fusion that is causing a food renaissance around our country.
There is a growing appreciation for blending the best of Fiji with Western-style influences, and cafe owners like Mango Cafés founder Kalara Vusoniwailala are doing just that. She says that in doing so they are helping promote the best of Fijis culinary art. This brings about an intoxicating fusion of fresh local ingredients with Western-style presentation. Our food in itself is exotic and its about time we take pride in promoting it.
